To a small bowl, add lukewarm water and sugar. Stir and dissolve the yeast. Let it sit until frothy, about 10 minutes.
Add the flour and salt in a large bowl. Create a hole in the middle. Add the dissolved yeast. Pour in olive oil. Add lukewarm water and knead the dough until the dough becomes smooth and elastic.
Cover the dough with some plastic wrap and let it rest for 30 minutes or until the dough has doubled.
Divide the dough in 4 balls. Roll the pieces of the dough into circular discs, approx. 0.5 cm thick.
Add feta cheese, parsley and rosemary in a separate bowl. Spread this mixture on 2 circular discs.
Top these two circles of dough with the other circles.Join the edges well with water and secure using a fork.
Heat a large frying pan on low heat and add oil. Fry the breads, until slightly golden brown; flip it to similarly cook on the other side.Remove the fried bread from the pan and place it on some kitchen paper to absorb any extra oil.
