In a small bowl, combine soy sauce, sugar, and grated ginger. Mix well till the sugar dissolves. There is no need to add any salt as Soy sauce has enough salt.
Place chicken pieces and half of the marinade in a zip lock bag. Toss to coat each piece well. Refrigerate and marinate the chicken for about 1 hour. Use the remaining marinade for grilling.
Grilling
Remove chicken and thread onto skewers. Alternate the chicken and scallions on the skewer. Discard the leftover marinade.
Place the skewers on the hot grill. Brush with some of the reserved marinade within the first 2 to 4 minutes. Grill for a total of about 10 to 12 minutes, turning the skewers a few times until the chicken is golden brown.
In a small bowl, pour some soy sauce and use for dipping.
Serve and enjoy these delicious chicken skewers!
Tips:
To avoid bacterial contamination, always discard the marinade used for the raw chicken.
For authentic yakitori, avoid charring the chicken.

Notes:In the authentic preparation, 1/2 cup Sake (Japanese alcohol) is used to marinate the Chicken (See step 1). I have not used it for preparing this recipe as the same was unavailable for purchase in the region.
