Japanese Chicken Yakitori is a simple and delicious meat recipe that is grilled and served on skewers. The meat with its sauce is cooked over a hot barbecue grill. It can be a quick appetizer for hosting a small group of friends or family.
Japanese Chicken Yakitori
Ingredients
- 900 grams Chicken thigh fillets
- 1 cup Soy sauce
- ½ cup Sake Please refer Notes below
- 2 tsp White granulated sugar
- 1 tbsp Ginger root grated
- 10-12 Scallions
Instructions
Preparing the Marinade
- In a small bowl, combine soy sauce, sugar, and grated ginger. Mix well till the sugar dissolves. There is no need to add any salt as Soy sauce has enough salt.
- Place chicken pieces and half of the marinade in a zip lock bag. Toss to coat each piece well. Refrigerate and marinate the chicken for about 1 hour. Use the remaining marinade for grilling.
Grilling
- Remove chicken and thread onto skewers. Alternate the chicken and scallions on the skewer. Discard the leftover marinade.
- Place the skewers on the hot grill. Brush with some of the reserved marinade within the first 2 to 4 minutes. Grill for a total of about 10 to 12 minutes, turning the skewers a few times until the chicken is golden brown.
- In a small bowl, pour some soy sauce and use for dipping.
- Serve and enjoy these delicious chicken skewers!
- Tips:
- To avoid bacterial contamination, always discard the marinade used for the raw chicken.
- For authentic yakitori, avoid charring the chicken.

In the authentic preparation, 1/2 cup Sake (Japanese alcohol) is used to marinate the Chicken (See step 1). I have not used it for preparing this recipe as the same was unavailable for purchase in the region.
