Thai food is strikingly similar to Indian cuisine as far as flavor and spice are concerned. However, it is still so distinct and has a culture of its own which makes you try it out again and again.

The Thai Peanut & Mango Salad is a bowl right from heaven! Lots of fresh healthy crunchy vegetables, mango, and the peanut dressing come together and work their magic. I usually prepare a massive bowl for the family. It is a light and healthy dinner by itself. I can assure you that any lunch or dinner that you host with this Thai Peanut & Mango Salad will make your spread tasty and memorable.

Thai Peanut & Mango Salad

Ingredients
  

Salad

  • 2 cups Lettuce
  • 1 cup Cabbage
  • 1 cup Red Cabbage
  • ½ cup Red Bell Pepper (Red Capsicum)
  • ½ cup Carrot
  • 1 Mango
  • ¼ cup Chopped cilantro
  • ¼ cup Chopped mint leaves
  • 1/3 cup Chopped green onions
  • ¼ cup Peanuts roasted

Peanut Dressing

  • cup Creamy Peanut Butter
  • 2 tbsp Lime Juice
  • 3 tbsp Honey
  • tbsp Apple cider vinegar
  • tbsp Soy sauce
  • 1 tsp Sesame oil
  • 1 tsp Sriracha
  • ½ tsp Ginger minced
  • 1 clove Garlic minced
  • 1 tbsp Water

Instructions
 

  • In a large bowl add thinly sliced lettuce, cabbage, bell pepper, carrot, mango, cilantro, mint and green onions. Set aside.
    Thai Peanut & Mango Salad
  • In a separate small bowl, whisk together peanut butter, lime juice, honey, vinegar, soy sauce, sesame oil, sriracha, ginger, garlic, and water.
  • Add more water if the consistency of the dressing is too thick. Season with salt and pepper, as per taste.

  • Gradually add the dressing to the salad, toss to coat well. Top with the roasted peanuts.
