Thai food is strikingly similar to Indian cuisine as far as flavor and spice are concerned. However, it is still so distinct and has a culture of its own which makes you try it out again and again.
The Thai Peanut & Mango Salad is a bowl right from heaven! Lots of fresh healthy crunchy vegetables, mango, and the peanut dressing come together and work their magic. I usually prepare a massive bowl for the family. It is a light and healthy dinner by itself. I can assure you that any lunch or dinner that you host with this Thai Peanut & Mango Salad will make your spread tasty and memorable.
Thai Peanut Salad
Ingredients
Salad
- 2 cups Lettuce
- 1 cup Cabbage
- 1 cup Red Cabbage
- ½ cup Red Bell Pepper (Red Capsicum)
- ½ cup Carrot
- 1 Mango
- ¼ cup Chopped cilantro
- ¼ cup Chopped mint leaves
- 1/3 cup Chopped green onions
- ¼ cup Peanuts roasted
Peanut Dressing
- ⅓ cup Creamy Peanut Butter
- 2 tbsp Lime Juice
- 3 tbsp Honey
- 1½ tbsp Apple cider vinegar
- 1½ tbsp Soy sauce
- 1 tsp Sesame oil
- 1 tsp Sriracha
- ½ tsp Ginger minced
- 1 clove Garlic minced
- 1 tbsp Water
Instructions
- In a large bowl add thinly sliced lettuce, cabbage, bell pepper, carrot, mango, cilantro, mint and green onions. Set aside.
- In a separate small bowl, whisk together peanut butter, lime juice, honey, vinegar, soy sauce, sesame oil, sriracha, ginger, garlic, and water.
- Add more water if the consistency of the dressing is too thick. Season with salt and pepper, as per taste.
- Gradually add the dressing to the salad, toss to coat well. Top with the roasted peanuts.
