We came across Gözleme on our trip to Turkey. Turkish Gozleme with Lamb is both a breakfast item and a delicious street food.
Flour, yogurt, water, and olive oil is used to make this Turkish flatbread. It is unleavened bread. The thin dough is topped with ingredients, often including minced lamb or Spinach and feta cheese along with some herbs. The dough is then folded over and sealed. It is grilled on an open griddle/pan and brushed with oil to make it crispy. I have skipped using spinach in this recipe. A single bite of the Turkish Gozleme with Lamb gives a burst of flavors in the mouth.
Turkish Gozleme with Lamb
Ingredients
For Dough
- 2 ¼ cup All-purpose flour
- ½ tsp Salt
- ½ cup Yogurt plain
- ½ cup Water
For Filling
- 400 grams Ground lamb
- 1 Small onion chopped
- 2 cloves Garlic minced
- 1 tbsp Tomato paste
- ½ cup Fresh mint chopped
- 2 Green onions chopped
- ½ cup Fresh parsley chopped
- ½ cup Feta cheese crumbled
- 1 Medium tomato chopped
- 1 tsp Coriander powder
- 1 tsp Red Chili powder
- 2 tsp Cumin powder
- 1 tbsp Olive oil
- ½ tsp Salt or to taste
- ¼ tsp Pepper or to taste
- Lemon wedges for garnish
Instructions
- In a large bowl, combine flour and salt. Add in the yogurt and water.
- Knead the dough until it is smooth and elastic. Cover with a clean towel or plastic wrap and set it aside.
- In a medium pan, heat the olive oil on medium heat then add the chopped onion and garlic. Saute for 3 to 4 minutes or until the onion is soft and translucent.
- Add the ground lamb and break it up with a wooden spoon. Cook for about 4 to 5 minutes, until the meat has browned. Stir in the tomato paste, along with the spice powders like coriander powder, chili powder, cumin powder, salt and pepper. Keep aside and let the meat mixture cool slightly.
- Meanwhile, divide the dough into 4 equal portions. Roll each piece into a rectangle.
- Spoon about 2-3 tbsp of the spiced lamb mixture in the middle of the rectangular sheet and spread it out a bit. Top with some fresh mint, green onions, fresh parsley, crumbled feta, and chopped tomato. Fold over the edges of the dough to seal. Repeat with remaining dough.
- Add some olive oil to a skillet and heat over medium heat. Add 1 or 2 of the Gozleme and cook on each side for about 3 to 4 minutes or until golden brown and crisp.
- Cut each of the Gozleme in diagonally and serve with lemon wedges.
