Kerala Chicken Fry is one of Kerala’s famous chicken preparations. It is very simple to prepare and is full of flavor. You may increase the spice levels easily as per your preference. The best combinations are with Rotis and Rice with other curries.

Kerala Chicken Fry
Ingredients
- 4 pieces Chicken Thighs
- 1½ tbsp Red Chilli Powder
- 1 teaspoon Turmeric Powder
- 5 pieces Curry Leaves
- Salt as per taste
- Coconut Oil or any other oil as per taste
Instructions
- Marinate the chicken thighs with Red Chilli powder, Turmeric powder and salt. Keep aside for 30 minutes.
- Take a frying pan and heat some oil. Add the chicken pieces and cook for around 25 minutes or until the water disappears.Add some more oil, curry leaves and fry the pieces until the top of the chicken is crispy brown while the inside is soft.
- Place the cooked chicken on a paper towel to drain excess oil.
- Serve with red rice or roti/chapatis.
